Corn & Milk (Powder) Steamed Cake

Corn & Milk (Powder) Steamed Cake


Ingredients 
1/2 cup cake flour
1 tsp baking powder.
1 egg
2 tbsp milk powder (1 pkt - 28g)
2 tbsp olive oil
1/3 cup corn puree
Handful of corn kernels 

Method
Mix cake flour, baking powder and milk powder and set aside.

In another bowl, mix egg, olive oil and corn puree.
Combine flour mixture and wet mixture, add in the corn kernels and mix well and scoop into mould.

Steam for 10 min and fluffy cake is ready. (I used electric steamer)

Another version of Steamed Cake

Little one developed fever over the past few days and refused to take any food or water (only wants to latch) except the occasional cherries so I decided make a light fluffy cake in the hope that she will eat more.

Easy Steamed Cake

Ingredients 
1/2 cup cake flour 
1 tsp baking powder. 
1 egg
1 -2 tbsp light muscovado sugar
2 tbsp olive oil 
1/3 cup cherries & strawberries puree


Method
Mix cake flour with baking powder and set aside.


In another bowl, mix egg, light muscovado sugar, olive oil and cherries & strawberries puree. I cooked my cherries and strawberries to bring out the natural sugar hence I only used 1 tbsp as opposed to the suggested amount of 2 tbsp.

Combine flour mixture and wet mixture well and scoop into mould.

Steam for 10 min and fluffy cake is ready. (I used electric steamer)

Chocolate & Orange Muffin

Decided to make some Chocolate & Orange Muffins following Annabel Karmel's recipe for toddlers. The muffin turned out really soft and aromatic with the Orange zest.

Since my LO is still on a min sugar/salt diet, I only gave her a little and she loved it. Daddy and mummy had the rest. Hahaha 



Chocolate & Orange Muffin 

Ingredient (makes 6)
1/2 cup plain flour
1 tsp baking powder 
2 tbsp cocoa powder
1/2cup or 125g unsalted butter
1/2 cup caster sugar
2 eggs, lightly beaten
1 tsp grated orange zest
1/3 cup semi sweet chocolate chips


Method 
Sift the flour, baking powder and cocoa.

Cream the butter and sugar. Add the eggs to the creamed mixture, a little at a time,together with a ttablespoon of the flour mixture.

Mix in the orange zest and the remaining flour and cocoa, then stir in the chocolate chip.


Pour the mixture into the muffin tray till 2/3 full.

Bake at 180 degrees for 20 min.

Mango & Yoghurt Steam Cake

Inspired by a fellow mummy's sharing on steam Dragon fruit cake so I decided to attempt my own fruit cake for LO's breakfast before I scoot off to work this morning. 

I omitted sugar as I am still trying to hold it off for my 14 month old girl and since she likes yoghurt, she enjoyed the mildly sweet and sourish cake.



Mango & Yoghurt Steam Cake

Ingredients (makes 3)
1 egg (beaten)
1/2 cup flour (I used cake flour)
1/4 cup fruit/veg puree (I used mango)
1 tsp baking powder
1/4 tsp vanilla essence 
1 tbsp sugar (I omitted this) 
1 tbsp olive oil 
2 tbsp Greek yoghurt/milk

Method 
Sieve the flour and baking powder in a bowl.

In a separate bowl, lightly beat the egg,vanilla essence and sugar (if you opt to add) . Add in yoghurt and mango puree and mix well.

Add the wet mixture to the flour mixture, mixing well and adding in the oil.

Scoop into cups and steam for 10 min

Steam Banana Cake

Thanks to one of the mummies on my facebook group who shared this simple recipe. I reduced the sugar as I decided to use more bananas since I am trying to avoid sugar as much as possible.

Result was a simple delicious breakfast for the family. 



Steamed Banana Cake

Ingredients (makes 8 small cupcakes)
2 eggs
30g sugar 
3 bananas (about 250g)
150g self raising flour 
70g oil (I used canola)
1/8 tsp baking powder
1/4 Cinnamon powder

Method 
Sift flour, baking powder and cinnamon powder and set aside.

Whisk sugar and eggs, add in the mashed banana and mix well.

Gently fold in the dry ingredients and oil until it is well incorporated.  Do not overmix as that will cause the cake to collapse when steaming.

Pour batter into cups and steam for 12-15min at high heat Or until inserted skewers comes clean.

1st Birthday Smash Cake!

For my lil sunshine's first birthday, i wanted to make her a baby friendly cake that i am confortable with her eating (and smashing) it. It is her birthday so she should have the most fun ! Ok, mummy had loads of fun getting all messy and dirty too . Pics below.

So here is her first birthday smash cake . Improvised from Previous Posting


Banana Yoghurt & Strawberry Oat Cake

Ingredients
1 cup baby oats/ rolled oats
2 ripe bananas
1 tbsp applesauce
1 egg
1/2 cup Greek yoghurt
1 tsp baking powder
1/2 tsp cinnamon powder
1 tsp vanilla essence
2 strawberries (sliced )

Frosting
8 oz of cream cheese (depending on how big is the cake)
2 tbsp appleasauce
2 tsp vanilla essence (optional)


Method
Mix all the ingredients and blend it in a food processor. I used my favorite handheld blender. Pour the mixture into 2 small cake pan.
Bake at 180 degrees for 35 min or until brown. Remove and cool .

This cake is moist and heavy in case you are wondering about the texture.

Banana & Applesauce Cake

Lil sunshine is turning one come end Aug so i decided to embark on my hunt for a healthy birthday cake for her special day . After all these months of giving her well thought out and nutritious food , i'm not ready to expose her to commercial food dye and sugar and all the junk food which she will eventually come to know in future. Hahahah ....



Came across the recipe Healthy Smash Cake and got me really excited since its Sugar free, Dairy free and Eggless. How perfect! But since LO is still toothless (not sure if cake is too dry for her), i decided to make it more mushy and the result is a kueh like texture that's sticky and gooey. Was a little disappointed as the dense consistency made it almost impossible to hold a shape good enough to frost.

Oh well, guess we will just have to eat the ugly cake now. Nom nom nom

Ingredient :

90g wheat flour
3 bananas
200g applesauce
1/2 tsp baking soda
1/2 tsp cinnamon
1/8 tsp nutmeg
1/2 vanilla essence

Method :

Mix mashed banana, appleauce, vanilla essence, nutmeg and cinnamon. Mix in flour and baking powder and ensure everything is well incorporated. Pour in mould and bake for 30 min at 180 degrees.

Lil sunshine seeing the cake for the first time. She was more intrigued by the pretty paper cup and attempted to eat that!

Oooh, this brownish sticky gooey mash actually tastes pretty good.

My kind of food ! *loves it when mummy lets me play with my food*

Can i have more please, mummy ?

After thoughts : This experience gave me inspiration to make more adaptions (i will never learn my lesson right ?hahahaha) so i will attempt to replace flour with oat powder (woohoo, gluten free !) Or search for a steam cake recipe for my base cake.Afterall, kuehs are steamed right ? Who says we must have cake for Birthdays. LO will have a MASH cake instead of a SMASH cake!hehehe
