Corn & Milk (Powder) Steamed Cake


Ingredients 
1/2 cup cake flour
1 tsp baking powder.
1 egg
2 tbsp milk powder (1 pkt - 28g)
2 tbsp olive oil
1/3 cup corn puree
Handful of corn kernels 

Method
Mix cake flour, baking powder and milk powder and set aside.

In another bowl, mix egg, olive oil and corn puree.
Combine flour mixture and wet mixture, add in the corn kernels and mix well and scoop into mould.

Steam for 10 min and fluffy cake is ready. (I used electric steamer)

Cheese Balls & Chicken Spinach Nuggets

LO was going to attend a MacDonald's Birthday Party so mummy make some snacks for her to munch along with her cousins and friends.
 
I love cheese balls especially when it is hot as the cheddar cheese was nice and chewy in the center ...hehehe
 

 
Cheese Balls

Ingredients
1 potato
1/2 sweet potato
1/4 cup cheddar cheese
1 egg (eggwash)
Panko breadcrumbs

Method
Mash potato and sweet potato and mix it well.
 
Form into balls and make a dent in the centre and place some cheddar cheese inside and close it well .
 
Dip it in egg wash and coat it with breadcrumbs.
 
Bake for 15 min at 180 degrees or until slightly brown .
 
 
Chicken & Spinach Nuggets

Ingredients
2 chicken fillet
1 garlic
1/4 yellow onion
1/2 cup spinach
1/4 cup cheddar cheese
Handful of coriander
Oregano
Basil
Black Pepper
1/2 -1 cup Panko breadcrumbs

Method
Blend all the ingredient above and form into desired shape. You may want to coat it with more breadcrumbs for additional crunch .

Bake for 20 min at 180 degrees.

Roasted Cilantro & Lemongrass Chicken with Vegetables

We went to a friend's party last week and LO enjoyed bits of the drumstick I gave her so I knew I had to try it on my own and omit the salt that goes in with the original recipe.

So here is my improvised salt free version for her Christmas Roast !
Am glad she loved it and had almost 3 pieces ... <3




Roasted Cilantro & Lemongrass Chicken with Vegetables
Ingredients
10 pieces of chicken parts
2 cloves of garlic
1/2 yellow onion
2 stalks of lemongrass
7-8 stalks of cilantro
1/2 Chinese pear

Method
Blend all the ingredients above and marinate for at least 5 hours or overnight is best !

Place the vegetables ( pumpkin, carrot, celery, onion) in a tray and drizzle some olive oil and give it a good toss.

Place the marinated chicken on top of the vegetables, drizzle some olive oil and bake it at 180 degrees for 45min.

Yummy !!!

Pork Loin with Apple Blueberry Sauce

Little one skipped her main lunch as she was too distracted with all the sights and sound while we were out so I decided to make something different for dinner .


Pork Loin with Apple Blueberry Sauce

Ingredients
1 pork loin
5 grapes
1 small apple
Handful of blueberries
Thyme
Black pepper
1/2 yellow onion
Water

Method
Marinate the pork loin in crushed grapes , thyme and black pepper for at least 1 hour.

Heat up a pan with some olive oil and cook the chopped onions on low heat for at least 20-30 min until it is soft and caramelised.

Remove the onion and using the remaining oil, place the pork loin into the pan and cook it well .

Once pork is done, you can choose to use the remaining liquid in the pan to cook the sauce . Just add in chopped apples ,  blueberries and some water and let it simmer till the apple softens. Do add in water as you cook to avoid burning the sauce .

Assemble and serve !

Sugar free Apple & Raisins Baked Oat Cake

I have been flipping through my recipe books recently for more inspiration and this simple sugar free recipe caught my eye.  Apple, raisins and cinnamon , how lovely !




Apple & Raisins Baked Oat Cake

Ingredients 
2 regular sized apples
1/2 cup raisins
2 cups of rolled oats blended to breadcrumb consistency (see pic)
1 tsp baking powder
1 cup fresh milk
1 egg (beaten)
2 tbsp olive oil
2 tbsp water
Cinnamon powder


Method 
Peel and cut the apples into cubes . Put apples, raisins, water and a pinch of cinnamon into a saucepan and cook for about 10 min till the apple softens. Add more cinnamon if you like.


After cooking the apples, you can choose to mash it but I wanted a smooth consistency so I blended the cooked apples in a processor and then mix it with the raisins.

Put the blended oat, baking powder , egg, milk and oil in another bowl and mix well.

Add in the apple and raisins mixture and mix well again .

Scoop the mixture into well greased moulds and sprinkle some cinnamon on top.

Bake for 30-35 min at 170 degrees. Remove from oven and let it cool and a yummy snack is done !

Sugar Free Steam Banana Milk Pudding

Steam Banana & Milk Pudding


Ingredients
1 egg (white only)
2/3 cup (approx 150ml) fresh milk 
1/2 banana


Method
Heat the milk in a saucepan ( do not let it boil) and set aside to cool . If you choose to add sugar, you should melt it in milk at this stage.


In another bowl, whisk the egg white till it is foamy.
Slowly add the cooled milk into the egg white and mix well. Pour the entire mixture through a sieve to remove the foam.

Add in the bananas or whatever variation you like and steam for 15 min. I am using an electric steamer so please adjust timing accordingly to your steamer.
Remember to cover the bowl with a cloth to prevent the water droplets from falling in.


Serve warm or chilled, equally yummy and smooth !

Pork Ribs & Lotus Root Peanut Soup

Ribs & Lotus Root Peanut Soup

Ingredients
1 L water
5 prime ribs (blanched)
1/4 yellow onion 
6 seedless red dates 
100g raw peanut
Lotus root (I cut about 10 pcs)
3 water chestnut (optional, I just happened to have them) 
1 smashed ginger


Method
Put all the ingredients in a slow cooker and cook on high for 2 hours or until ribs soften.

No seasoning needed.

Egg Muffin

Since LO is still recovering, I made some simple egg muffins or mini frittata for her to share with her cousins.


Egg Muffins

Ingredients 
5 eggs 
2 tbsp milk
1/3 cup grated cheddar cheese
1/2 cup mixed veg
Black pepper


Method 
Whisk the eggs and milk, add in the cheddar cheese and black pepper and give it a good stir. This is not too cheesy so do add in more cheddar or some salt if you prefer a more savoury muffin.

Place the mixed vegetables in the greased muffin tray and pour in the egg mixture till 3/4 full.

Bake at 180 degrees for 20 min.

Another version of Steamed Cake

Little one developed fever over the past few days and refused to take any food or water (only wants to latch) except the occasional cherries so I decided make a light fluffy cake in the hope that she will eat more.

Easy Steamed Cake

Ingredients 
1/2 cup cake flour 
1 tsp baking powder. 
1 egg
1 -2 tbsp light muscovado sugar
2 tbsp olive oil 
1/3 cup cherries & strawberries puree


Method
Mix cake flour with baking powder and set aside.


In another bowl, mix egg, light muscovado sugar, olive oil and cherries & strawberries puree. I cooked my cherries and strawberries to bring out the natural sugar hence I only used 1 tbsp as opposed to the suggested amount of 2 tbsp.

Combine flour mixture and wet mixture well and scoop into mould.

Steam for 10 min and fluffy cake is ready. (I used electric steamer)

Healthy Cauliflower & Pumpkin Pasta

Was in a rush to prepare something simple for LO as we are having a dinner invitation tonight and I wasn't sure what she could eat so a pasta it shall be!

And when I saw the cauliflower in the fridge,  I knew I had to make a "cream" based sauce. I tend to use more pumpkin so that it is sweeter but you can adjust it to your taste by having more cauliflower instead.



Healthy Cauliflower & Pumpkin Pasta

Ingredients 
1 clove of garlic
1/4 small yellow onion 
5~6 cauliflower florets
1 cup of pumpkin
2 tbsp fresh milk/ Greek yoghurt
2 tbsp grated cheddar cheese 
2~3 tbsp water/stock 
1/8 tsp Thyme 
Unsalted butter


Method 
Steam the cauliflower and pumpkin and puree it. 

In a sauce pan, add some unsalted butter and stir fry the chopped onions, garlic and thyme for a few min.

Add in the cauliflower and pumpkin puree and mix well. Stir in the water, milk and cheese and cook on medium low heat for another 3~5 min and it is done.

Stir fry Udon and Baked Eggplant & Mushroom

Stir fried Udon with Vegetables 





Baked Eggplant & Mushroom

Ingredients
5~8 slices of Eggplant
3 Brown Mushroom (diced)
Homemade Tomato Paste
Cheddar cheese 

Method 
Place the eggplant and mushroom in an oven dish, cover it with tomato paste and top with cheddar cheese. Bake for 20 -25 min at 200 degrees. 

Serve and enjoy!

Homemade Spinach & Cheese Pizza with Yoghurt Dough


 Our craving for the day.  Pizza! 






Yoghurt Dough

Ingredients 
1 cup self raising flour (I used bread flour & 1 tsp baking powder 
1 cup Greek yoghurt

Method 
Mix the flour and Greek yoghurt well in a mixing bowl.
Bring the dough onto a well floured board and knead for 5~8 min.
Roll out and cut into desired size.

Add pizza topping and bake for 10 min at 200 degrees 

Homemade Pumpkin & Tomato Sauce

Ingredients 
1 clove of garlic (chopped)
1 chunk of pumpkin 
4 tomatoes
10 cherry tomatoes
1 bay leave
Olive oil

Method
Deseed and remove the skin off the tomatoes if desire.
Fry the garlic and bay leave in olive oil till fragrant. Add in the pumpkin and tomatoes and simmer for 45min~ 1 hour.

Baked Cod in Lemon & Olive

Here's another incredibly simple and yummy cod dish for a quick dinner.



Baked Cod in Lemon & Olive

Ingredients
1 cod fillet
1 tsp olive oil
2 tsp lemon juice (fresh lemon)
1 clove of garlic (minced/chopped finely)
1 wedge of tomato (chopped finely)
Black pepper 
Dried Basil


Method
Pour the lemon juice and olive oil over the cod fillet, season with black pepper and basil and sprinkle the garlic & tomato onto the cod.


Bake for 20-25 min at 190 degrees. The baking time varies with the thickness of the cod.

Cream of Chicken Soup

I have made some vegetable stock in the afternoon and was contemplating what to cook for dinner and decided on a simple cream of chicken soup to go with rice.
This is no Campbell quality but it is salt free, sugar free and yummy enough for my LO.

I made this m.  ore soupy so that it is easier for my LO to drink. For a thicker consistency,  just increase the flour.




Cream of Chicken Soup 

Ingredients
1 bay leave 
1 cup of vegetable/chicken stock 
1/2 cup fresh milk 
2 tbsp plain flour (for thickening)


Method
Bring the vegetable stock , bay leave and half the milk to a low boil.

In another bowl,whisk the remaining milk and flour into a mixture. If you prefer a thicker consistency,  you can add 1-2 more tbsp of flour.

Pour the mixture into the saucepan and heat over low heat, stirring continuously.

Continue to simmer and stir until the mixture is smooth and thick.

Add in shredded chicken and vegetable as desired. I gave her the carrot from my earlier stock so there was no wastage of my veg.

Oh,and the mushroom was used our stir fried veg for the grown up.

Pumpkin & Spinach Frittata

Lunch is a really quick affair as I am working from home so a veggie frittata is the perfect solution for all !

I opted for the easy method of stove top cooking instead of baking which will give a nice brown cheese crust with a handful of cheese added before it goes into the oven .




Pumpkin & Spinach Frittata 

Ingredients
2  eggs
1 cup chopped spinach
1/2 cup chopped pumpkin
1 spring onion (chopped)
1 garlic
1/2 small onion
Handful of parsley (chopped)
1/4 cup grated cheddar
1/2 tbsp plain flour 
1 tbsp fresh milk


Method 
Lightly whisk the egg, cheddar, milk and flour in a bowl and set aside.


Stir fry the onion, garlic till fragrant, add in the pumpkin and cook till it softens slightly.
Add in the spring onion and spinach and mix well.

Add in the egg mixture, covering all the vegetable and cook at medium low temperature till the frittata is cooked.

Serve and enjoy!

Chocolate & Orange Muffin

Decided to make some Chocolate & Orange Muffins following Annabel Karmel's recipe for toddlers. The muffin turned out really soft and aromatic with the Orange zest.

Since my LO is still on a min sugar/salt diet, I only gave her a little and she loved it. Daddy and mummy had the rest. Hahaha 



Chocolate & Orange Muffin 

Ingredient (makes 6)
1/2 cup plain flour
1 tsp baking powder 
2 tbsp cocoa powder
1/2cup or 125g unsalted butter
1/2 cup caster sugar
2 eggs, lightly beaten
1 tsp grated orange zest
1/3 cup semi sweet chocolate chips


Method 
Sift the flour, baking powder and cocoa.

Cream the butter and sugar. Add the eggs to the creamed mixture, a little at a time,together with a ttablespoon of the flour mixture.

Mix in the orange zest and the remaining flour and cocoa, then stir in the chocolate chip.


Pour the mixture into the muffin tray till 2/3 full.

Bake at 180 degrees for 20 min.

Fish Chowder

More fish dishes for LO and getting her to take in more milk. ☺


Fish Chowder 
1 white fish fillet (deboned and cut into chunks)
1 small onion 
1 clove of garlic 
1/2 carrot (diced finely)
1/2 potato (diced finely/ chunks) 
1-11/4cup fresh milk
1 tsp basil
1 tbsp plain flour 
Olive oil


Method 
Saute garlic, onion, potato and carrot for 5 min. Add in plain flour and coat it well.  Add in half the milk and bring to a boil then simmer at low heat for 20 min until potato softens.


Add in the fish , basil and remaining milk and simmer for another 10 minutes until fish is cooked.

Mash and serve.

If you want to speed up the cooking, You can choose to boil the potato first.

Fruity Chicken Curry




Fruity Chicken Curry
Ingredients 
120g chicken fillet 
100g pumpkin 
1/2 tomato
1 small carrot
3-4 grapes 
1 Apple (royal gala)
1 clove of garlic (diced)
1/2 small onion (diced)
2 slices of ginger 
1/2 tsp cumin powder
1/4 tsp turmeric powder 
2/3 cup of water 
Olive oil

Method 
Cut the chicken fillet into small pieces and marinate it with the crushed grapes for at least 30 min-1 hour.

Pan fry garlic,onion and ginger in olive oil until it turns fragrant. Add in the chicken, grapes , turmeric and cumin powder and mix well. 

Add in the chopped pumpkin, apples, carrots ,tomato, water and simmer for 20-30 min until carrot softens.

While simmering, you can mash the pumpkin and apples to incorporate it well into the sweet gravy.

Taste really yummy with rice. You can choose to add Greek yoghurt for a more creamy gravy.

Cheese Biscuit

This is another version of cheese biscuits with milk added and a hit with the kids too. 



Cheese Biscuits
Ingredients 
2/3 cup flour
1/3 cup cheddar cheese
25g unsalted butter
2 tbsp milk


Method
Rub in butter into the flour until it resembles bread crumbs. Stir in grated cheese and milk until mixture forms a dough.


Cut into desired shapes and bake at 180 degrees for 20-25 min .

Creamy Veggie Tofu Patties

I intended to make some creamy veggie patties but realised that I have run out of Greek yoghurt and since I refused to be defeated,  I ransacked my kitchen and found 2 happy ingredients cauliflower and oat!  Just perfect! 




Creamy Veggie Tofu Patties

Ingredients (makes 8)
1 egg
1 firm tofu
1 small onion
1 small chunk of carrot (steamed)
1 cup cauliflower (steamed)
1/2 cup oat
1/4 cup spinach 
1/4 cup cheddar cheese
Black pepper to taste 
Basil to taste 
Olive oil

Method
Stir fry all the vegetables, tofu and onion in olive oil till fragrant.

Put the above mixture into the blender,  add in the oat, cheese and seasoning and blend till it is well mixed.

Scoop into lightly greased muffin trays and bake for 20 min at 180 degrees or until brown.
